Don’t quite know how to cook these new foods on your plan?
You have your new plan ready and you’ve bought all the foods you’ll need for your meal prep. But wait, there’s a few things on here that you’re not quite sure how to prepare.
Have a little time to bake:
Spaghetti Squash – Preheat oven to 350. Cut the squash in half and scoop out the center with the seeds. Spray your baking pan with a little non-stick spray. Place each half of the squash on the sheet cut side down. Put pan in the oven and bake for about 30-40 minutes. Remove from the oven and let cool for at least 15 minutes. Use a fork and drag it through the squash and it will seperate into strands that resemble spaghetti noodles.
Eggplant: Preheat oven to 400. Cut off ends and discard. Slice eggplant and place slices on a sprayed baking pan. Roast slices for 10 minutes and then turn over. Return to oven for another 10 minutes. Remove from oven and cool before weighing and bagging up for your meals. You can also grill slices for about 3 minutes per side to give it a different flavor.
Short on time or just don’t want to crank up that oven:
Spaghetti Squash – Cut the squash in half and scoop out the center with the seeds. Place in gallon size plastic bag leaving about an inch of it opened to vent the steam. Microwave for about 6-7 minutes. Let cool and then do the same as you would the baked squash.
Eggplant – Pierce the skin of the entire eggplant several times with a fork. Place whole eggplant in microwave on a microwave safe plate or in a safe shallow dish. Microwave about 8 minutes maybe more if it’s a larger eggplant. The veggie will seem to deflate a bit. Remove from microwave and cool. The slice lengthwise and scoop out the seeds since they get a little mushy in the microwave. Then weigh and measure. The skin of the eggplant is where most of the nutrients are. So wash it good and be sure to eat it too.
